Oceania Cruises – who has always patted themselves on the back for having some of the best cuisine on sea, will be offering a state-of-the-art culinary studio when they debut their new 1,258-guest Marina in winter 2010.

The new center will be fully equipped with individual work stations, each with induction cook tops, a first at sea, affording guests the opportunity to gain a hands-on learning experience.

Why make the Marina a “ship for epicureans”?

According to Bob Binder, president of Oceania Cruises:

“The culinary experience has always been the foundation of our brand. When we designed Marina, we added in some new twists and a range of dining you don’t find on other ships. The shipyard told us they’ve never built a ship with so much space dedicated to dining. The culinary studio features 22 stoves, each with it own workstation, food processor, cutting boards and burners. Guests will be actually creating the dishes along with the instructor – it’s really the best way to learn. We’ll also have a dedicated wine-tasting center.”

Oceania Cruises’ curriculum, designed in part by Bon Appétit, will appeal to a wide range of tastes and incorporate regional cultures and cuisines. Depending on the itinerary, classes may range from 45 minutes to three hours, and cater to all levels of aptitude, from beginner to master-chef level. The culinary experience will also be brought ashore with market tours where guests will shop for local ingredients with the chef. Additionally, guest chefs may arrange for students to have private tastings at wineries and access to famous shore-side kitchens.

A Ship for Food Lovers

Oceania Cruises’ new Marina has been purposefully designed for epicureans with 10 dining venues, including six open-seating, gourmet restaurants. Public spaces awash in rich woods, marble and granite, fine wool carpets and lustrous leather retain the intimacy and signature design elements of the line’s three sister ships while affording an increased level of space, comfort, convenience and luxury amenities. Guest accommodations are comprised of 629 staterooms and suites, 96 percent of which have private verandas. Facilities include an array of elegant bars and lounges, a full-service spa, spacious fitness center, outdoor swimming pool and hot tubs.

A new standard for spaciousness…

The Marina will set a new standard for spaciousness. The standard veranda stateroom on the Marina will be 282 square feet, larger than any found on premium cruise lines, and even larger than some suites on premium cruise lines. The penthouses will be even more spacious at 420 square feet.

Every stateroom and suite features a separate bathtub and shower, and all will have marble baths.

California’s Shasta Sunset Dinner Train – A Four-Season Option

The Shasta Sunset Dinner Train adds a touch of elegance to any vacation…

In the mid-1890′s George W. Scott and William W. Van Arsdale began laying track to connect McCloud, California with the recently arrived Southern Pacific R.R. in Sisson (what is now called Mt. Shasta). The two gentlemen’s pursuit of business led to the purchase of a sawmill at Squaw Valley, California. Now having the ability to both produce and haul a commodity, in 1897 two businesses were formed, the McCloud River Lumber Co. and the McCloud River Railroad.

Little did these two gentlemen know that years down the road, their trains would turn into “excursion trains” traveling through spectacular California scenery featuring elegant dining aboard their vintage rail cars.

I never knew…

Without realizing it, I have been a train buff all my life. I began riding the rails from infancy with my parents beginning with the New York subway system. It was then the Long Island Railroad followed by the Jersey Central Railroad as I commuted to work from New Brunswick, New Jersey to New York City…OHHHH, so many years ago – brings back memories…

Guess that’s why I have such an interest in train trips today. Last year I escorted a group on a train tour through Colorado – The Trains of Colorado - with Mayflower Tours, and this year our Northern California tour with Trafalgar Tours included the Napa Valley Wine Train. That’s why I was so excited to run across information on The Shasta Sunset Dinner Train, and knew I had to share it with you.

Shasta locator_mapJust minutes off Interstate 5 in magnificent Northern California – one of the most breathtaking scenic routes I have driven in the United States – lies the historic logging town of McCloud. It’s the perfect starting point for a rail adventure back in time to an elegant period of railroad travel where the journey was often more important than the destination. Still is.

Sit back, hear the clickety-clack and feel the gentle sway of the cars aboard the six-car Shasta Sunset Dinner Train, a nostalgic three-hour, 28-mile rail journey through the awesome scenery of pristine Northern California

Forests of fir and pine, punctuated by vistas of snow-capped Mount Shasta and the spires of Castle Crags and the Trinity Alps, the Shasta Sunset Dinner Train winds its way over the historic McCloud Railway, on tracks first laid more than a century ago. Steep grades, sharp curves, and a unique switchback were features of the original construction that guests experience today.

Shasta serving_rosemaryWith their deep “Pullman Green” exteriors and rich mahogany and brass interiors, meticulous attention to detail marks the carefully restored 1916-era heavyweight dining cars that make up the Shasta Sunset Dinner Train.

Dining aboard is just what one would expect to experience in such elegant surroundings. Passengers are pampered by trained service staff, while tables glow with white linens, fine china, polished silver, and sparkling stemware that accent the carefully prepared four-course dinner experience.

Executive chef, Edward Hines, offers the following entrée choices this August. Different months have different choices. Dinner will be accompanied by a special Spring Roll Appetizer (fresh vegetables sautéed, then wrapped in phyllo dough and baked in the oven, finished with a teriyaki-ginger sauce), fresh baked breads, Caesar salad, a choice of desserts and coffee, tea and soft drinks. Or choose a selection from their extensive wine list. Vegetarian meals are available on request. It’s best to call with your menu selection as soon as possible. August Entrée Choices:

Black Butte Beef Wellington – A choice filet mignon, topped with mushroom paté and wrapped in delicate puff pastry, baked to a golden brown. Presented with Chef Hines’ Merlot Sauce and topped with a delicate béarnaise.

Raspberry Almond Chicken – Breast of chicken marinated in a raspberry vinaigrette, baked in a toasted almond crust, and topped with a fresh fruit sauce.

Peppercorn Roasted Salmon – Filet of Pacific salmon oven baked, served on a bed of watercress and freshly dried tomatoes, finished with a dijon mustard herb cream sauce.

Roasted Rack of Lamb with Port and Olive Sauce - Roasted rack of lamb in an herb and cheese crust served with a port and black olive sauce.

Shall we dance?

A dance car is part of the dinner train, except in warmer weather when an open-air car is provided for guests to enjoy the panoramic views. After dark, coach-mounted carriage lights brilliantly illuminate the train’s surroundings.

Colorado Cookin’ in Vail

It seems like only yesterday, but it was last September when I made a stop in Vail, Colorado. It was a first-time visit for me, but hopefully not the last. I was escorting a group of our traveling friends on a Trains Across Colorado tour with Mayflower Tours. I fell in love with Vail right then and there.
